I not really sure to be honest. My 2015 43m has the 2525 and only has one cooler. I've never seen the second run so I guess it's just a back up, or maybe when it get up to a certain temp they both kick on.

I have never seen one with two myself. I'm sure there is a good reason they can't be cheap.

From what I have been told the newer schwings have two oil coolers to help with hydraulic oil temps on big yardage pours , it has always been a issue on large matt pours when you are pumping high output for long durations.

Yes it has! That's a good reason for sure. I remember a few times buying a pickup truck load of ice bags, then stacking them on the brain, diff cylinders and top of tank. Got me through thousands of yards. I'm glad schwing finally got wise to the problem, I would like to know if the extra solved the issue. I also remember having ice bags melted to the paint on a brand new pump, that sucked!

Sprinkel water over your radiator/cooler and the temp will drop right down. Don't need much, just a continues slight sprinkel like when it rains.  Of course it helps if there is decent water suply on site..

I hear that dip. Like you said water supply is key, and that's not usually an option around here. If there is water on site it's always 300 feet away with a 50 foot hose.

We order all new pumps with dual coolers. It helps a ton on the big pours, high or long pushes and in hotter climates.
